A former barrister and chartered accountant, Donal's path changed after a court case involving cold distillation in DNA testing sparked a new idea: what if this delicate process could be used to make spirits?
The Pooka Lives On
Ireland’s oldest spirit was made to drink young, sweet, and smooth. Our Pooka Poitín brings it back to life.
Distilled under vacuum in small pots, it’s clean, elegant, and free of the harsh chemicals hot stills leave behind. Named after the Pooka, a mischievous faerie blamed for wild nights and worse mornings, it’s a tribute to a time when spirit-making was part magic, part mischief.
