Mourne Dew Distillery is a unique fusion of ancient tradition and modern innovation. Our family’s distilling heritage dates back to at least the 1870s, when both my great-grandfather and grandfather earned a reputation for their exceptional poitín and whiskey-making skills. Their passion for distilling was passed down to me, and their stories inspired the creation of Mourne Dew Distillery.
While we cherish and honour the old ways, we have updated traditional recipes using modern technology. Tried and tested techniques are combined with cutting-edge distillation and flavour development processes, allowing us to produce award-winning spirits of unparalleled quality.
Reviving Family Tradition with Modern Techniques
The essence of Mourne Dew Distillery lies in our commitment to blending the old and the new. We’ve gone back to the roots, using old mash bills and selecting wood policies that are perfect for each whiskey’s maturation. This thoughtful approach has led us to create two standout whiskey varieties: Blended Irish Whiskey and Single Malt Whiskey.
But it’s not just about tradition. We’re constantly exploring new techniques. One of our key innovations is vacuum distillation, a process that allows us to better understand how botanicals and distillates react when subjected to low-temperature distillation. As a result, we have built our own pot stills, which allow us to craft spirits like poitín, gin, and vodka with the highest levels of purity and flavour.

Through these modern distillation techniques, we are able to preserve all the desired flavours from botanicals while leaving behind the unwanted elements typically produced by conventional distillation methods. The result is a range of spirits that contain only the finest flavours, capturing the essence of the botanicals without any bitterness or harsh notes.
